Course Overview
This QCF accredited course covers the supervisor's role in ensuring compliance with UK and European food safety legislation and the importance of recognising and minimising the risk of contamination in the catering.
Who is it for?
The course is suitable for anyone working in a supervisory role where food is prepared, cooked and served, for example in hospitals, hotels, pubs, schools and prisons.

- Food poisoning
- Applying and monitoring good hygiene practice
- Workplace and equipment design
- Temperature control
- Waste disposal, cleaning and disinfection
- Pest control
- Personal hygiene and staff
- Contribution to staff training
- Legislation
Course Objectives
By the end of the course the delegate will be able to understand the supervisor's role in ensuring good food safety, high standards of hygiene, pest control and understanding the principles of the HACCP system.
Assessment
Delegates take a multiple-choice exam and successful delegates receive a CIEH certificate.
Duration
18 hours (normally 3 days)
This course can be run in-house for up to 15 delegates.
